No, it's hard to limit the list to ten. I've always liked the Katana, but only the wire spoked model...

I don't know if they are the best ever, but 10 bikes I would have in the garage are
1974 Ducati 750 Sport
1974 Laverda SFC 750
1974 Moto Guzzi S7
1986 Suzuki GSXR 1100R
Kawasaki Z1
Honda CBR1100R ('82 Castrol 6hr saw it had to get a bike)
Suzuki RG500
1983 Yamaha RZ350R
1997 Honda CBR600R
GSXR 750R almost any model except the early 90's

That V8 Guzzi was created in 1952 and did 158mph, which IMO is bloody hard to believe.
When I started riding the Kawasaki 750 H2 was the bike to own, it was an amazing bike for it's time, this was followed by the Z1A900, 136 mph which was unheard of at the time, very fast but handled like a jelly on acid, but you have to love them.
