The cans line the walls of the unit, helping keep the temperature constant while minimizing energy usage. A ceiling vent allows frigid desert air to flow in during the night. The beer absorbs this cold, but never freezes because of its alcohol content. When the hatch is closed during the day, the beer releases the coolness. The same thing happens when you open one and drink it.
